We use the infinitive verb "להחמיץ" when talking about the Exodus from Egypt, describing how the dough of the people of Israel did not have time to ferment, meaning it didn’t rise, and that’s why we eat matzah to this day!
אֲנַחְנוּ מִשְׁתַּמְּשִׁים בְּשֵׁם הַפֺּעַל לְהַחֲמִיץ כַּאֲשֶׁר אֲנַחְנוּ מְדַבְּרִים עַל הַיְּצִיאָה מִמִּצְרַיִם וּמְסַפְּרִים שֶׁהַבָּצֵק שֶׁל בְּנֵי יִשְׂרָאֵל לֹא הִסְפִּיק לְהַחֲמִיץ, כְּלוֹמַר הַבָּצֵק לֹא הִסְפִּיק לִתְפּוֹחַ וְלָכֵן אֲנַחְנוּ אוֹכְלִים מַצוֹת עַד הַיּוֹם!
However, we also use this infinitive when we want to turn vegetables into pickles. You can pickle cucumbers, pickle olives, and even pickle cabbage.
אֲבָל אֲנַחְנוּ מִשְׁתַּמְּשִׁים בְּשֵׁם הַפֺּעַל הַזֶּה גַּם כַּאֲשֶׁר אֲנַחְנוּ רוֹצִים לַהֲפוֹךְ יְרָקוֹת לַחֲמוּצִים. אֶפְשָׁר לְהַחֲמִיץ מְלָפְפוֹנִים, אֶפְשָׁר לְהַחֲמִיץ זֵיתִים וְגַם אֶפְשָׁר לְהַחֲמִיץ כְּרוּב.
Another field where we use this infinitive is lateness. It’s better to arrive on time at the station to avoid missing the train or the bus.
עוֹד תְּחוּם שֶׁבּוֹ אֲנַחְנוּ מִשְׁתַּמְּשִׁים בְּשֵׁם הַפֺּעַל הַזֶּה הוּא: אִיחוּרִים. כְּדַאי לְהַגִּיעַ בַּזְּמַן לַתַּחֲנָה כְּדֵי לֹא לְהַחֲמִיץ אֶת הָרַכֶּבֶת אוֹ אֶת הָאוֹטוֹבּוּס.
We can also use this verb metaphorically in the expression "to miss an opportunity". Some things have specific timing, and if we fail to notice it, we might miss the chance.
אֲנַחְנוּ יְכוֹלִים לְהִשְׁתַּמֵּשׁ בְּשֵׁם הַפֹּעַל הַזֶּה גַּם בַּתְּחוּם הַמֵּטָאפוֹרִי בַּבִּיטּוּי "לְהַחֲמִיץ אֶת הַהִזְדַּמְּנוּת". יֵשׁ דְּבָרִים שֶׁיֵּשׁ לָהֶם תִּזְמוּן מְסוּיָּם וְאִם לֹא שַׂמְנוּ לֵב לַתִּזְמוּן אֲנַחְנוּ עֲלוּלִים לְהַחֲמִיץ אֶת הַהִזְדַּמְּנוּת.

1. If you can't wake up on time in the morning, you might miss the bus to work, which can cause you to be late for work and disrupt your entire daily schedule.

3. If you want to pickle vegetables, you need to use the right salt and vinegar to preserve the taste of the vegetables for a long time.
